Executive Chef, Nicole Hanna

Chef Nicole Hanna is a New Hampshire native who spent the early days of her career as a line cook at the local tavern in her hometown. After cooking for two years professionally, she was plucked from her small town kitchen and selected to compete in Gordon Ramsay's cooking competition series "Hells Kitchen". This ignited her passion and gained her a brand new skill-set she was eager to put to use. Upon her return from filming, Chef Nikki began to work as a task force chef, assisting in opening new restaurants in New Hampshire, Maine, Massachusetts, and New York. Ultimately, deciding to pack up and move to New York in hopes of finding even more growth and opportunity. It was not long before Chef Nikki visited Hudson's Mill for the first time and fell in love with the ambiance and unique energy this space exudes. She thought silently to herself "I want to be the chef at this restaurant", one year later, Chef Nikki accepted the Chef De Cuisine position at Hudson's Mill Tavern, and has since been promoted to Executive Chef. Nikki's vision for the dining experience at Hudson's Mill is to encompass the culture of Rockland County, and to represent our diverse community with food that makes everyone feel welcome. She places a strong focus on sourcing local and seasonal ingredients and adjusting the menu to reflect what is fresh and local during the changing seasons, providing thoughtful and delicious options for vegan, gluten free, and dietary restricted guests, and nurturing the future of the culinary industry as whole. Hudson's Mill has been proud and very fortunate to provide internships to many students of Rockland Community College and the Boces Culinary Program where they are able to train with Chef Nikki and her team. The philosophy and ambition of Chef's team is to nurture a new generation of restaurant culture where integrity, kindness, education, and sustainability are at the forefront of every conversation. 


General Manager, ​Michele Curran

Michele was a foodie from a young age, always selecting the Rockland County favorite, Romolo’s for her birthday dinner from the ripe age of 7. Upon completion of her Bachelor’s Degree in Marketing, Michele took a position at Lena’s Catering at The Nyack Seaport. She began as a Sales Assistant and quickly worked her way to Sales Person and eventually Sales Manager within 2 years. Michele ran events at The Nyack Seaport as well as large off-site events in NYC for Lena’s Catering. Upon the sale of the business, Michele stayed on with the new owner, Angelo Rubino, and helped re-brand Lena’s Restaurant (located in the building) to Two Spear Street. Michele took a liking to the 4-Star Restaurant management and moved from Catering to Restaurant Manager working closely with Executive Chef Anthony DeVanzo and Lead Server Marcelo Gambarato (Velo, Bici) to elevate Two Spear Street’s Fine Dining reputation. Wishing to continue her education, Michele left the business in 2009 to focus on obtaining her MBA in Business Management in which she wrote a Business Plan for "The Hudson Grille", a Gastro-Pub in North Rockland that sourced local vendors for a farm to table experience with an extensive craft beer and cocktail bar. In 2018, Michele came on board to help the founders of Hudson’s Mill design and open the space. She has remained General Manager since inception.
